Apricot Blush Cupcakes

Sometimes you just have to have some butter cream! And when you need a cupcake, YOU NEED A CUPCAKE! I whipped these up from a cake mix (blasphemy I know, but I was in a hurry) and my favorite butter cream recipe. They are filled with apricot pie filling. This stuff is incredible and available at the Amish Bulk food stores.
Then I topped them with white sugar crystals and a Hershey Drop. Yum Yum. My grandson ate 3 or 4 (depending on whether he is telling his mom or his grandpa how many he has eaten ) in one hour. I would take that as a compliment but the kid eats gummy bears! Yuck. Diana
